Xacalli Kitchen in Silverado, California

Between 2022 and 2024, I had the privilege of photographing Xacalli across three sessions. Each visit revealed something new about the restaurant.

My first session at Xacalli in 2022 took place not long after the bar was completed. The space itself is a story. Built with reclaimed wood and materials from the Frances Citrus Packing House, originally constructed in 1914, the bar set the tone for what Xacalli stands for: connection to place, respect for history, and thoughtful design.

During the sessions, Executive Chef Vincent Espinoza’s attention to detail was unmistakable. He sources local and sustainable ingredients, working hand in hand with a farm nestled in the Silverado mountains literally across the street. Herbs, fruits, and vegetables found their way into both dishes and cocktails.

His story is one of persistence and passion, from graduating at The Art Institute of Orange County to climbing through the ranks of respected kitchens across Southern California. His leadership has brought Michelin recognition in previous roles, and now his focus is on building Xacalli with the same dedication.

Across three years and three sessions, my photography at Xacalli has shown me the restaurant’s layers and has let me grow in my food photography career. I can’t be more thankful for the people at this restaurant for helping me on my path.
